Making Tempeh During The Final School Term
This April is so busy because I have to face the final exams. Before the exams start, I have a final assignment to do. This is my first step in making tempeh. Thankfully I made tempeh with my friends. The first day I bought 1 kg of soybeans. Then soaked overnight, then cleaned with running water. The beans look fuller and expand. Next, the soybeans are boiled for more than 1 hour. Because the amount is large, it takes longer to boil. The beans are drained until slightly dry, then sprinkled with 3 grams of yeast evenly. The next step is to put the soybeans into plastic and another wrapper using banana leaves.
I want to see the results of the difference in the wrappers used. After being wrapped, the surface is given a lot of holes. I use a needle and a stick to make holes in the plastic and banana leaves. After that, the raw tempeh is placed in a room without being exposed to sunlight. I observe the growth of the fungus every day. The color of the soybeans changes to white little by little. The temperature is warm and gives off a distinctive tempeh aroma. On the second day after making tempeh, the fungus covered the soybeans well. As for the results, I think the one using banana leaves is better than the one using plastic. Tempeh wrapped in banana leaves has a stronger tempeh aroma and more hyphae.
